The Parparoussis winery are known for experimenting with their wines with outstanding results and the Parparoussis Apostogma is no exception. The late harvest Sideritis grape is picked early, ensuring high acidity and low sugar – a key requisite for producing a clean and characterful eau de vie. As with the famous brandies of Cognac and Armagnac, a Charentais Alembic still is used and only the heart of the distillate – the fraction rich in aromas and flavours – is kept. It is then aged for twelve years in French Oak Barrels from Limousin, producing a wonderfully smooth and flavoursome spirit. A high class brandy with unique aromas and complex characteristics.
